The other day I was watching Barefoot Contessa (secret single behaviour confession: I always have Food Network on the telly in my apartment. I’m addicted).I digress…they featured a really simple recipe for granola that was quick and easy.

Anyway, it made me want granola asap (along with the mouthwatering smells as it bakes) so I had a look in my cupboards to see if I had the ingredients…and result, I did!

Usually I make granola with whole rolled oats (the rough kind, not the kind that’s been semi-processed and is kind of floury), add my choice of sweetener and then add nuts and seeds. But this time I cheated a bit; instead, I used store-bought muesli’s & granola and combined them together. All of the ones I used have no additives, are balanced in fruit, grains/seeds & nuts and most importantly, taste phenom(enal). I used: Dorset Cereal’s Simply Nutty Muesli, Alara’s Active Muesli (with quinoa flakes!) & Eat Natural’s Toasted Buckwheat Muesli. Then I simply added melted coconut oil, desiccated coconut, and dried fruit & nuts & honey. Simples.

This granola was tasty straight out of the oven…but once cooled it had clustered & caramelised into little bites of coconutty goodness; they tasted insane! SO good. I’ve already finished one jar so I’m going to have to make some more swiftly.

Coconut Granola (makes 2x 500ml mason jars)

2 1/4 x cups of muesli mix of your choice (I chose three different kinds for texture, but one kind would work just as well)
1/2 x cup unsweetened desiccated coconut
1/2 x cup mixed dried fruit & nut (mine was brazil, almond, hazelnut & walnuts with raisons)
1/2 x cup honey
1/4 x cup melted coconut oil

Preheat oven to 180 degrees. In a bowl, combine the three types of muesli, the coconut & the dried fruit & nuts. Use your hands to mix altogether to ensure even distribution. Next, heat the coconut oil in the microwave until melted. Add the honey to the muesli mix, then add the melted coconut oil. Stir until everything is covered. Next, spread the mix onto a baking sheet until it lies flat, ensuring its evenly spaced. Bake in the oven for 15 minutes, then take out and stir/flip, putting it back in the oven for an additional 5 minutes until the granola is crisp and golden to your preference. Remove from the oven and let cool for 10-15 minutes.
